If you can weigh it, use the same amount by weight! If you can't weigh it, then you can try with the same volume. Just make sure to fluff up the flour and spoon it into the measuring cup, then level it off before adding it to the recipe. (If you're nervous, you can use 1-2 Tablespoons less flour if you're using Bob's!)

I love this recipe. I was a bit skeptical at first, but then I made it, and it is truly tremendous. GF baking rarely works for me and I have to tweak each GF baking recipe for my family, but this worked as is! Used the King A Measure 4 Measure (Pro Tip: You can get the big bag for cheap at Costco or Bjs). My initial goal was to get rid of eggs in my fridge, and I stumbled into a truly phenomenal recipe. For people who like a crispy cookie, I recommend doing the full 12 minutes. Experimented with 10, 11, 12. 10 for soft, 11 for chewy, 12 for crispy. I recommend prepping your cookie racks and area for post oven assembly because it can move past and that process really makes these cooked

In reply to Miranda.

Hi, Miranda! For cookies that don't spread enough, there are 2 common culprits:

1. Too Much Flour. Did you weigh your flour? If you scooped with your measuring cup instead, you can accidentally pack in too much flour. Even an extra 1-2 Tablespoons can make a difference in the spread of your cookies. I recommend weighing for best results, or the scoop and level method if you don't have a kitchen scale.

2. Dough That's Too Cold. If you've chilled the dough longer than 2 hours, you may need to let it come closer to room temperature before baking. Try pulling the cookie dough out 20-30 minutes before baking so that it can spread more in the oven.

and a bonus thing to consider is Brand of Flour. Did you use a different brand of flour than I did? I use King Arthur Measure For Measure flour, but if you swapped in another 1:1 blend, like Bob's Red Mill or Cup4Cup, you may need to adjust the amount of flour, since each blend has a slightly different combination of starch and proteins.

I'm cheering you on!

I tried this recipe and my cookies actually did not flatten-they stayed in a fuller shape. Anything I can do to fix this? I just baked a few tonight as a practice but I have a double batch of dough cooling in the fridge
