Hi Nicole! I'd love to help you troubleshoot. Did you use King Arthur Measure-For-Measure or another GF flour blend? If you used another blend (even something like Bob's Red Mill) that can impact the color and set of the cookies. Another thing to check is how you measured your flour. If you scoop flour WITH the measuring cup (rather than weighing or spooning flour into the measuring cup), you may have accidentally added too much flour, which can also impact the spread, set, and color of the cookies.

I would give these 5 stars if they didn’t take so long (I feel like saying “easy” isn’t true) and they turned out softer. The edges and center never had varying colors. I wound up cooking them for 16 minutes because I was waiting for the edges to get golden while the middle was underdone. The edges never cooked faster than the middle and the cookies were crispy. I’ll try again taking them out at the 13 or 14 mark, which is still significantly longer than the instructions say. My boyfriend said he’d just rather eat the dough than the actual cookies. We dunked them milk which improved the taste and texture substantially.

these came out great! Better than I thought was possible for a gluten free cookie, genuinely good.
My only note would be about the browned butter, I added a little extra water cause I felt like I let a lot evaporate when cooking it. some recipes I've seen add water back in to get to the original butter volume

I left them in the fridge overnight and I covered the top of the cookie dough with plastic before I put the lid on the bowl and even after the dough sat on the counter for an hour it was very hard. I had to chop it up and squeeze it into balls but they did cook. They're not soft and chewy but eatable. Next time I will only leave them for the 2 hr min.
