Hi, Sharon! Great question! My favorite trick for using citrus zest is to rub it into the sugar of the recipe at the start. It will help separate the zest, and it&#039;ll also infuse more of the citrus oils into the grains of the sugar, which will give you a brighter, more vibrant flavor overall.
