I made this today for my husband’s bday – tbh I picked it from a Google search because we didn’t have gf cake mix in this house and this recipe used 1-1 flour and other ingredients we had on hand. I’m so glad I tried it!
Our daughter has celiac, so we’ve been gluten-free in the house, but now that she’s in college the rest of the family sometimes has gluten. I was out of the room when they first tasted this cake – as soon as I came in they both turned to me slightly panicked asking “did you make this gluten-free?!” When I replied that of course I had, I was told “it’s so moist I got scared that it couldn’t actually be gluten-free.”
Thank you for a recipe so good that they thought it could’ve been what she used to eat before getting diagnosed – it’s always special when she doesn’t have to feel like she’s missing out.
We’ll definitely be saving this recipe for future birthdays and I’ll be checking out your other recipes too.

I made this tonight and it turned out great. It’s so moist and tender! Next time I would probably half the frosting just because I prefer a thinner layer of frosting!
