Hi Jane! I&#039;ve worked with the Chebe cinnamon roll mix before, but haven&#039;t baked with it in cookies. Based on my experience working with it in cinnamon rolls, I&#039;d say it&#039;s probably not a great substitute for most cookie recipes here, since it&#039;s so high starch and doesn&#039;t have the same protein content as a typical 1:1 gluten-free mix. To accommodate your rice &amp; oat allergies you&#039;d probably be best served looking at recipes that use individual flours that you mix yourself rather than those that call for a 1:1 mix if you&#039;d like to use the Chebe flour. Paleo cookie recipes that use almond flour or coconut flour are another good option!]]></description>
