Holiday baking is definitely one of my favorite traditions of the holiday season, but it’s definitely something that can take some adjusting when you go gluten-free.
Thankfully, having some reliable recipes gives you a GREAT place to start, and our goal here at Sweets & Thank you is to make it as easy as possible for you to make delicious gluten-free holiday cookies anyone will love, whether they’re gluten-free, or not!

Tips For Making Gluten-Free Holiday Cookies
- Read The Whole Recipe Card Through First. Maybe annoying, but it’s important! Does your recipe need to chill? Does it require a certain flour blend to work? Are there any tricky steps? Reading everything though before you start will give you the biggest chance of success.
- Use The Correct Flour. ESPECIALLY in gluten-free baking, you need to use the kind of flour the recipe calls for. Different flours behave differently in recipe, so substitutions aren’t usually a good idea. (for instance: Almond flour, coconut flour, and gluten-free 1:1 flour are NOT interchangeable!) Use the type of flour your recipe calls for so the recipe turns out!
- Measure Flour Carefully! Speaking of flour, your cookies will turn out their best if you weight or measure your flour correctly. It’s a simple little trick, but makes a BIG difference in how your cookies turn out!
- Check Your Oven Temperature. Most ovens actually *don’t* run at the correct temperature! An inexpensive oven thermometer can help you check if yours does. Then, make sure you fully preheat your oven before baking.
- Stay Safe! If you’re don’t keep a gluten-free household but you’re baking for someone who eats gluten-free, it’s REALLY important to keep your cookie recipe safe by avoiding what’s called cross-contamination. This means using very clean mixing bowls and utensils, and using fresh or dedicated ingredients. (i.e. if you’ve scooped into the sugar with a measuring cup that’s also touched wheat flour, that sugar is no longer safe for someone with Celiac disease. Use fresh or dedicated ingredients to avoid any cross contact with wheat to avoid making someone sick.

Do you have any idea if the Chebe all purpose mix would work as a stand in for the AP gf flour called for? It’s a chewy tapioca mix, with no need for binder, and can be used for cookies. I have rice and oat allergies in my family, so most gf flour blends are not an option.
Hi Jane! I’ve worked with the Chebe cinnamon roll mix before, but haven’t baked with it in cookies. Based on my experience working with it in cinnamon rolls, I’d say it’s probably not a great substitute for most cookie recipes here, since it’s so high starch and doesn’t have the same protein content as a typical 1:1 gluten-free mix. To accommodate your rice & oat allergies you’d probably be best served looking at recipes that use individual flours that you mix yourself rather than those that call for a 1:1 mix if you’d like to use the Chebe flour. Paleo cookie recipes that use almond flour or coconut flour are another good option!
