Our Ginger Pomegranate Mocktail is the perfect holiday drink! The combination of spicy ginger beer, tangy pomegranate juice, fresh lime, and a sweet kiss of mint makes it taste as delicious as it looks!

Ingredients

For a Single Serving

  • 1/2-1 ounce Mint Simple Syrup* (1-2 Tablespoons)
  • 1 ounce Fresh Lime Juice (2 Tablespoons)
  • 3 ounces Pomegranate Juice (6 Tablespoons - just over 1/3 cup)
  • 3 ounces Ginger Beer* (6 Tablespoons - just over 1/3 cup)
  • Ice Cubes

For A Pitcher (8 Servings)

  • ¾ cup Mint Simple Syrup
  • 1 cup Fresh Lime Juice
  • 3 cups Pomegranate Juice
  • 3 cups Ginger Beer
  • Ice Cubes (At least 3-4 cups)

Optional Garnish

  • Pomegranate seeds
  • Lime slices, wedges, or wheels
  • Fresh mint leaves
  • Ginger slices

Instructions

To Make A Single Serving:

  • Start With Ice. Fill a 10-12 ounce glass with ice cubes.
  • Combine. Add mint simple syrup, lime juice, pomegranate juice, and ginger beer.
  • Stir & Finish. Use a straw, stirrer stick, or spoon to GENTLY stir the drink. (This way the flavors blend together!) Garnish with pomegranate arils, lime slices or lime wedges, fresh mint leaves, or ginger slices, as desired.
  • Enjoy! Drink right away!

To Make Ginger Pomegranate Mocktails For a Crowd (8 Servings)

  • Start With Ice. Add ice to a large pitcher or a punch bowl. (At least 10-12 cups capacity!)
  • Combine. Pour in mint simple syrup, lime juice, pomegranate juice, and ginger beer. Gently stir a few times to combine (be gentle and slow so you don’t make it go flat)
  • Garnish with lime slices, cranberries, a fresh mint sprig, and more. Happy holidays!

Notes

  • How to Make Mint Simple Syrup. Combine 1 cup sugar and 1 cup water in a saucepan. Stir over medium heat until the sugar dissolves, then turn off the heat and add 1 cup fresh mint leaves. Steep the mint for at least 30 minutes up to 2 hours, then cool to room temperature. Strain the syrup through a fine mesh sieve and store in a glass jar. Mint syrup will keep several weeks in the fridge and can be made in advance.
  • Can I Use Ginger Ale Instead of Ginger Beer? Technically yes, though it'll change the flavor profile of the drink. Ginger ale is less spicy and much sweeter tasting, so the drink won't be as ginger forward. This can be a good option for kids, but for grown-ups, I really do like ginger beer better. If needed, feel free to use low sugar or diet ginger beer to help moderate the sugar content!
  • Make Ahead Tips. If you're making this ginger pomegranate mocktail for a party, you can get a little bit ahead on your prep. Combine the mint simple syrup, lime juice, and pomegranate juice ahead of time, but WAIT to add the ginger beer until right before serving so it stays fizzy.
