¾ounceFresh Lime Juice or Lemon Juice(1 1/2 Tablespoons)
2 ½ouncesPineapple Juice(5 Tablespoons)
2-4ouncesSparkling Water or Coconut Water(1/4-1/2 cup)
Garnish:
Pineapple slices or pineapple leaves
Maraschino cherries
Lime or lemon slices
Cocktail umbrella or edible flowers
Instructions
Start With Ice. Fill a 10-12 ounce glass with ice cubes.
Combine blue curaçao syrup, cream of coconut, lime juice, and pineapple juice. Stir with a straw or cocktail stirrer until just combined. Pour mixture over ice.
Top Off The Drink with sparkling water or coconut water.
Garnish with a slice of pineapple, lime or lemon, or edible flowers. (Or, try a maraschino cherry or cocktail umbrella!)
Notes
Use Curacao SYRUP not Liqueur! To keep this a non-alcoholic mocktail recipe, be sure to ONLY use Blue Curacao syrup, like Monin, or Torani. Avoid Blue Curacao liqueur, which contains alcohol.
Cream of Coconut (sometimes labeled Crème de Coconut) is a sweetened cocktail mixer. It's not the same thing as canned coconut milk or coconut cream. If you want an unsweetened version, you can use coconut cream or coconut milk, though the flavor will be more subtle and less sweet.
