Gluten-Free Peppermint Brownie Bites

Description

These gluten-free brownie bites are dipped in chocolate & coated with crunchy peppermint bits–they’re the perfect easy holiday treat!


Ingredients

  • 1 Recipe of your favorite homemade or boxed mix gluten-free brownies,* made adding 1/2 tsp. peppermint extract
  • 2 cups (one 12-oz. bag) semisweet or dark chocolate chips
  • 1/4 cup crushed candy cane or peppermint candies
  • Optional: white chocolate or vanilla almond bark, for drizzling

Instructions

  1. If you haven’t yet, bake your brownies. (Again, you can use homemade brownies or a store-bought mix.)
  2. Chill The Brownies Before Slicing. Cool the brownies completely AND refrigerate them at least 1 hour until they’re fully chilled. This makes them easier to slice and helps the chocolate set later.
  3. Once the brownies are chilled, you’re ready to cut them into bites! I recommend a clean, sharp knife. (Rinse it off between cuts for perfectly straight lines.) Cut the brownies into 25 bites, creating 5 rows and 5 columns as you cut. To make smaller brownie bites, you can also do 6 rows and 6 columns for a total of 36 brownie bites. 
  4.  Get everything ready to dip so you’re ready to go as soon as the chocolate is melted. You’ll need a place for the chilled brownie bites, the melted chocolate, somewhere to set them down and add the crushed candy cane bits. I recommend setting out a baking sheet lined with parchment for placing dipped brownie bites.
  5. In a double boiler (a large heat-proof bowl set over a saucepan with 1-2” of gently simmering water). gently melt the chocolate and stir until the mixture is smooth and glossy.
  6. Working 1 brownie bite at a time, use a fork to dip the brownie bite into the melted chocolate to coat it thoroughly. Let the excess chocolate drip back down into the bowl of chocolate before transferring the dipped brownie bite to your prepared baking sheet lined with parchment paper. Sprinkle with crushed peppermint candy or candy cane.
  7. Then, just keep going with the remaining brownie bites. Dip in chocolate, let the excess drip off, place on the baking sheet and sprinkle with peppermint.

Notes

*Add 1/2-1 teaspoon peppermint extract to your brownie recipe or brownie mix for an extra dose of peppermint flavor!
