Combine cream of coconut, fresh lime juice, pineapple juice, and coconut water in a cocktail shaker or liquid measuring cup. Shake or stir to combine evenly.
Pour Over Ice. Fill a glass with ice and pour the pineapple mixture into the glass.
Top Off The Drink with sparkling water.
Garnish with slices of pineapple, lime, pineapple leaves, or edible flowers.
Notes
Cream of Coconut is a non-alcoholic sweetened cocktail mixer that's often added to drinks like a piña colada or Blue Hawaiian. It's not the same thing as coconut cream.
Coconut Cream Option. If you prefer to use unsweetened coconut cream, I recommend adding a little drizzle of agave syrup or simple syrup, along with a drop or two of coconut extract.
Try It With Mint! Add some fresh mint leaves to the drink for garnish, or muddle them with the cream of coconut and lime juice.
Go Frozen! For a frosty twist, you can blend this drink with 1/2 cup frozen pineapple chunks and 1 cup ice. (Omit the sparkling water)
