  • Cream of Coconut. This is the ingredient that gives a piรฑa colada or Blue Hawaiian mocktail it’s signature creamy coconut flavor. (Prefer an unsweetened option? Check out the FAQ below!)
  • Fresh Lime Juice. This is the time for FRESH lime, not bottled! That tangy, tart flavor helps balance this drink beautifully.
  • Pineapple Juice. Tangy, sweet pineapple juice adds a big burst of tropical flavor.
  • Coconut Water. Coconut water mocktail for the win! It’s got a subtle coconut flavor, some natural sweetness, and natural electrolytes, making it a great addition!
  • Sparkling Water. Next, you’ll layer the chicken with a quick tomato salad made from fresh cherry tomatoes, fresh basil leaves, olive oil, balsamic vinegar, salt, and pepper. I like using colorful red and yellow tomatoes for an extra pop of color!
  • Lots of Ice. If it’s not an ice-cold mocktail, I don’t want it!
  • Some Fresh Garnish! Last, but not least, I recommend at least one fresh garnish to make this pineapple mocktail sing. Pineapple slices, and lime slice are two good options, but check out the garnish tips below for more ideas!

  1. Combine cream of coconut, fresh lime juice, pineapple juice, and coconut water in a cocktail shaker or liquid measuring cup. Shake or stir to combine evenly.
  2. Pour Over Ice. Fill a glass with ice cubes and pour the pineapple mixture into the glass.
  3. Top Off The Drink with sparkling water.
  4. Garnish with a pineapple slice, lime, pineapple leaves, or edible flowers.

Add a little extra flair and fun by dressing this coconut pineapple mocktail up with some garnish! Even just 1-2 of these will really make your drink shine!

  • Fresh Pineapple Slices – a little pineapple wedge looks adorable!

  • Pineapple Leaves (wash first!)
  • Fresh Mint Leaves

FAQ + Tricks For The Best Coconut Pineapple Refresher

Can I Use Coconut Cream Instead of Cream of Coconut? Yes, but you’ll probably also want to add a little bit of sweetener, since coconut cream isn’t sweetened. A little agave syrup or simple syrup works great! Also keep in mind that the coconut flavor will be more muted with coconut cream than with cream of coconut.

Go Frozen! For a frosty twist, you can blend this drink with 1/2 cup frozen pineapple chunks and 1 cup ice. (Omit the sparkling water)

Swaps & Variations

  • Add Mint! I LOVE fresh mint with pineapple. Use some as garnish, or muddle some fresh mint leaves in with the lime and cream of coconut.
  • Try it With Soda. If you want more fizz, feel free to swap out the sparkling water/club soda with a little lemon-lime soda. It’ll be sweeter, but this can be fun for a party!
  • Use Flavored Sparkling Water. Or, swap out the sparkling water for a flavored version! Try lime, guava, pineapple, orange, or another complementary tropical flavor for best results!
  • Add Some Warmth. Feel free to add a little fresh ginger or even a few jalapeรฑo slices to add some warmth to this delicious drink. (We do this in our Guava Mocktail and it’s AMAZING!)

For The Drink:

  • ยฝ ounce cream of coconut* (1 Tablespoon)
  • ยพ ounce fresh lime juice (1 1/2 Tablespoons)

  • Cream of Coconut is a non-alcoholic sweetened cocktail mixer that’s often added to drinks like a piรฑa colada or Blue Hawaiian. It’s not the same thing as coconut cream.
  • Coconut Cream Option. If you prefer to use unsweetened coconut cream, I recommend adding a little drizzle of agave syrup or simple syrup, along with a drop or two of coconut extract.
  • Try It With Mint!ย Add some fresh mint leaves to the drink for garnish, or muddle them with the cream of coconut and lime juice.
