Before we get to the recipes, let’s brush up on a few quick tips that’ll give you better gluten-free brownies every time:
Use a Metal Pan. Glass and ceramic pans are pretty, but they don’t bake as evenly as a light-colored metal pan will. Brownies take longer to bake in glass pan or a ceramic pan and they can “climb” the sides and sink later, that can give an uneven appearance.
Use The Right Flour. When possible, use the type and brand of flour called for in the recipe. (My favorite is King Arthur Gluten-Free Measure-For-Measure Flour.) Alternative flours like coconut flour, almonds flour, or oat flour are NOT 1:1 substitutes for all-purpose gluten-free flour blends.
Measure Metric! You will get the most consistent, reliable results by measuring dry ingredients with a kitchen scale. I promise it’s worth it! (And it’ll save you dishes!)
Dissolve The Sugar! For glossy, shiny, crackly tops, make sure to dissolve the sugar well. This might be by melting it with the chocolate and butter, or whipping it with the eggs. Just make sure the sugar is dissolved and it’ll help crate that shiny crust!
Err on the Side Of Underbaking. For delightfully fudgy brownies, err on the side of under-baking rather than over-baking. A toothpick inserted in the center should come out with some moist crumbs or bits of brownie. If it comes out clean, the brownies are over-baked. If it comes out with wet liquid batter, the brownies are under-baked. Keep in mind that brownies will continue to cook in the pan for a few minutes after they come out of the oven!
