It’s hard to think of a more traditional English dessert recipe than Strawberry Eton Mess. This classic British dessert has been around since the late 19th century, and has been delighted dinner guests, brightened summer picnics, and even made an appearance at at least one royal garden party.

Made from a mix of soft whipped cream, juicy berries, and vanilla meringue cookies, this easy dessert is simple enough for beginners and doesn’t require any fancy baking or decorating skills.

Simple Ingredients To Get Started

The three main components of a Strawberry Eton Mess recipe are meringues, whipped cream, and fresh berries. This light, fresh summer dessert is easy to make with just a few ingredients:

  • Heavy Whipping Cream. You’ll need heavy cream to make our fluffy vanilla whipped cream. No milk, half-and-half, or other substitutes will work here.
  • Powdered Sugar. A little confectioner’s sugar in the whipped cream and a little in the berries adds the perfect subtle touch of sweetness.
  • Vanilla Bean Paste or Vanilla. I love to use vanilla bean paste for little vanilla flecks in the whipped cream, but regular vanilla extract works like a charm, too. Use whichever you have!
  • Meringues. Yes, I’m saving a step by using store-bought meringues. They’re inexpensive, shelf-stable, and work beautifully in homemade Eton Mess. Prefer to make your own meringues? Go for it with this meringue cookies recipe!
  • Fresh Strawberries. I’m making our Eton Mess with strawberries, because there’s just nothing like strawberry Eton Mess!
  • Maybe Some Fresh Raspberries. I love tossing in a few fresh raspberries with the strawberry sauce for a delicious fresh berry duo, but you can absolutely stick with all strawberries, if you prefer!
  • Optional: Fresh Lime Juice. Just a little trick to help you mash your berries. Some acidity (like lemon juice or lime juice) can help break down the berries. Don’t have any on hand? You can skip it this time!

Why Do They Call It Eton Mess?

Though there are several stories around the creation of this delicious dessert, arguably the most popular story is that Eton Mess was created at the annual cricket match between Eton College and Harrow School in the late 1800s.

Some stories say it was a full pavlova/meringue, topped with whipped cream and berries that was dropped or broken accidentally, then scooped into bowls and served anyway. (Hence the “mess” part of the name.)

Others claim the “mess” refers to the mixture of ingredients, or the busyness of eating it in a crowd, while still more claim the name is actually political. No matter the origin, this classic English dessert recipe has become a summer staple.

How To Make Strawberry Eton Mess, Step By Step

First, Prep The Components

  1. Mash Half Of The Strawberries. Place half of the strawberries in a shallow bowl or dish with 1 Tablespoon powdered sugar (and 1 Tablespoon lime juice, if using!) and mash with a fork or potato masher until fairly smooth and juicy. Alternately, you can puree them in a food processor or blender if you want quicker prep or smoother texture!
  2. Mix In The Remaining Strawberries. Add the rest of the strawberries to the mashed strawberries and stir to combine. Taste the berries and feel free to add a bit more powdered sugar or more lime juice, to taste.
  3. Whip The Cream. Add heavy cream, 1 Tablespoon powdered sugar, and the vanilla to the bowl of a stand mixer or a large mixing bowl. Beat with a whisk attachment or hand mixer 5-7 minutes, or until soft peaks form.
  4. Break The Meringues. If desired, set aside 6 whole meringue cookies for garnish. Then, you can crush the meringue cookies with your hands or place them in a bag and bash them with a rolling pin to break them up a bit. I like to have a variety of shapes and sizes of pieces, with some fine pieces and some larger pieces.

Prep Ahead Tip

At this point, you can store the components–chill the whipped cream, wash the berries, and chill the berry sauce, and store the crushed meringues in an airtight container until you’re ready to assemble each Eton Mess. Then, you can assemble them fresh right before serving, which will give you the best texture.

Then, Assemble Before Serving

Now, it’s time to assemble. This no-bake dessert is definitely on the un-fussy side. While you can certainly make beautiful, crisp layers (for more of a trifle look), this dessert can definitely be a bit hodge-podge. In no particular order (and without being too neat about it), layer:

  1. Strawberry Sauce. Spoon a bit of the fresh strawberry sauce into the bottom of your dish.
  2. Whipped Cream. Add dollops of the whipped cream mixture.
  3. Crushed Meringues. Then, sprinkle with crunchy meringue pieces.
  4. Fresh Berries. If desired, add a few fresh raspberries (or some extra strawberries).

Repeat these layers, adding dollops of each until your glasses or dishes are full. I love to top each serving with some fresh berries, maybe a sprig of mint, and one whole meringue cookie.

Variations To Try

  • Try Raspberries. You can use our easy raspberry sauce and fresh raspberries instead of the strawberries. It’s delicious!
  • Add Lime Zest. For a more pronounced lime flavor, try adding a little bit of lime zest into the strawberry sauce. It’s bright and zingy in the best way!
  • Make It Vegan! Swap our whipped cream for coconut whipped cream (or an easy store-bought vegan option, like CocoWhip which is more stable!) Then, use these vegan meringues made with aquafaba instead of egg whites.
  • Try Some Yogurt. For a lighter version, you can make half of the amount of whipped cream and fold it into yogurt.
  • Mix In Other Berries. For 4th of July, or a fun celebration, try using a mix of strawberries and blueberries! Or, use blackberries. Yum!
  • Try Other Soft Fruits. You can also make this with peaches, or swap in a cherry sauce instead!

Is Eton Mess Gluten-Free? YES! Eton mess is a naturally gluten-free recipe, which makes it great for guests or family members with dietary restrictions. Meringues (made with egg whites, sugar, and vanilla) are naturally gluten-free, as is our whipped cream, and the fresh berries.

Can I Use Homemade Meringues? You bet. I use store-bought meringue cookies to keep things simple, but you can absolutely make meringues from scratch if you prefer.

Can You Make Eton Mess In Advance? I find that this Strawberry Eton Mess recipe has the best texture when it’s assembled closer to when you plan to serve it. (That way the crunchy meringue cookie bits stay crisp!)
